Here’s an awesome, tasty and festive dish you can make for your holiday party or meal that we found on The Food Network (we made one little change to make it even more healthy.) Roasted Brussel Sprouts With Pomegranate and Hazelnuts.

Here’s the Healthy:

Brussels sprouts are a cruciferous vegetable (that means really good for you) high in fiber, vitamins, minerals and antioxidants.  They may also come with added health benefits, including the potential to reduce the risk of cancer, decrease inflammation and improve blood sugar control.

Pomegranate seeds get their bright red color from polyphenols. Polyphenols are are powerful antioxidantsPomegranate juice contains higher levels of antioxidants than most other fruit juices. It also has three times more antioxidants than red wine and green tea.

The bright green and the deep red of the main ingredients perfectly match with the colors of the holiday!

Here’s the Recipe:

Ingredients:

  • 1 1/4 pounds Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground pepper
  • 3 tablespoons pomegranate molasses (You can get these on amazon or Olive Nation, OR you can make them yourself.)
  • Seeds from 1 pomegranate
  • 1/2 cup coarsely chopped toasted hazelnuts
  • Finely grated zest of 1 lime
  • 1 tablespoon finely grated orange zest

Instructions:

  • Preheat the oven to 375 degrees F.
  • Put the Brussels sprouts in a medium roasting pan; toss with the olive oil and season with salt and pepper.
  • Roast in the oven until light golden brown and a knife inserted into the centers goes in without any resistance, about 45 minutes.
  • Transfer the sprouts to a large bowl and add the pomegranate molasses, pomegranate seeds, hazelnuts, lime and orange zests.
  • Season with salt as needed..
